Pressure Cooker Beef Stew
Hi there! It’s been a while, hasn’t it? Much has transpired since the last time I posted. I’ve been adjusting to married life for the last year now! Starting my own family has been a catalyst for my amateur chef aspirations. I will dedicate some space on my blog to sharing recipes my family enjoys!
This stew is an Ensz household favorite. Although we enjoy this dish year-round, we all know it’s the most delectable when it’s below freezing outside! Stay warm and cozy this winter with this delicious and effortless beef stew!

Pressure Cooker Beef Stew
Simple and savory beef stew recipe that is sure to be a family favorite!
Equipment
- 1 Pressure cooker
Ingredients
Overnight Beef Marinade (optional)
- 2 Tbsp soy sauce
- 2 Tbsp Worcestershire sauce
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp Italian seasoning
Main Ingredients
- 1½ lbs beef stew meat
- 1 tsp salt optional
- 1 tsp black pepper optional
- 5 C beef broth
- 3 tsp minced garlic
- 1 red bell pepper diced
- 1 onion chopped
- 1 16 oz bag baby carrots chopped
- 1 lb baby Dutch yellow potatoes cubed
- 1 15 oz can tomato sauce
- 2 Tbsp cornstarch
- 2 Tbsp cold water
Instructions
- Optional: Combine marinade ingredients in a small bowl. Add stew meat to a leak-proof and sealable bag. Pour in the marinade mixture, seal the bag, and shake until the meat is thoroughly covered. Release any extra air in the bag and marinate in the refrigerator overnight.
- Add oil to the pressure cooker and select the 'SEAR' function. Add beef and cook until all sides are brown. Feel free to add salt and pepper if you wish.
- Cancel the 'SEAR' function. Add beef broth, vegetables, and tomato sauce to the pot. If you didn't marinate the beef overnight, add marinade ingredients now.
- Close and lock the pressure cooker lid. Be sure the steam valve is closed.
- Set pressure cooker to the 'STEW/CHILI' function and cook on high pressure for 35 minutes. Note that it will take the pressure cooker about 15 minutes to pressurize before it starts cooking.
- Once cooking is completed, allow the pressure to naturally release for 15 minutes. After 15 minutes, manually release the remaining pressure.
- Mix cornstarch and water in a small bowl until cornstarch is dissolved. Stir mixture into the stew. This can be repeated until desired thickness is achieved.
- Serve stew with your favorite rolls and any garnishes you like!
Notes
- About 373 calories per serving (1 cup).
- Feel free to add more or fewer seasonings to fit your taste as desired. I tend to use minimal salt when cooking to allow my family to add as much or as little salt to their food as they’d like.
